Is there anything better than good ole beans on toast? Well we’ve been whisking up our own eat clean version here at home over the past few weeks
What You Need:
For the Beans:
1 Small Onion
1 Tin of Mixed Beans or Chickpeas or Kidney Beans
1 Tsp Cumin
1 Tsp Oregano
1 Tsp Thyme
1/2 Tsp Cayenne Pepper
Pinch of Himalayan Pink Salt
2 Cups of Tomatoes Chopped Finely
2 Tbspns Tomato Puree
For The Bread:
1 Tub Fat Free Yoghurt (500ml)
Use empty tub and measure 2 full tubs of Oats
1 Egg
1 Tsp Bread Soda
Pinch Himalayan Pink Salt
What To Do:
For the Bread:
Preheat oven to 180C
Mix yogurt, oats, egg, bread soda and salt in a large mixing bowl.
Spread mixture into an oven tin.
Bake for 45-50 mins.
For The Beans:
Chop onions finely and fry in a little coconut oil over a medium heat.
Add finely chopped tomatoes and stir well.
Stir in cumin, cayenne pepper, salt, oregano, thyme and tomato puree.
Drain and rinse beans or chick peas and add to the mixture, reduce heat and allow simmer for 5-10 mins.
Serve beans on toasted porridge bread! DELISH!
