MY TOP THREE WEEKDAY DINNERS


Weekday dinners; It can be difficult to decide what to eat during the week that won’t ruin all your hard workouts! I decided to give you a few tips.

 

Here are my top three weekday dinners!

1: Courgetti Bolognese:

What You Need:
Courgettes (spirallized or you can do this yourself with a spiralizer)
Carrots (spirallized or you can do this yourself with a spiralizer)
Turkey Mince
Tin of Tomatoes
Tomato Puree
Garlic (2-3 cloves depending on preference)
Onion
Pepper
Coconut Oil
 
What To Do:
Fry minced garlic in coconut oil on a medium heat.
Add turkey mince and cook till browned.
Chop pepper and onion finely and add to mince, stirring to cook through.
Add tin of tomatoes and 2-3 tablespoons of tomato puree – stir well.
Reduce heat and allow to simmer for 10 mins
Meanwhile spiralize your carrots and courgette if not already pre-bought that way.
Place in a non-stick pot or pan at a low heat and toss gently every minute or so for 5-8 minutes.
Serve courgette and carrot as your “pasta” with your Bolognese on top.

2: Four Ingredient Chicken Pizza

What You Need:
Chicken Fillet (1 per person)
Tomato Purée
Onion
Garlic

What To Do:
Preheat oven to 180C
Slice the chicken fillet down the middle and open out, bake for 15-20 mins
Sauté onions and garlic in a pan with coconut oil.
Top chicken with tomato purée and the sautéed onions and garlic.
Bake for a further 15 mins.
Top with Parmesan cheese and serve!
Quick, easy and delicious!

3: Low Carb Lasagna

What You Need:
3-4 Courgettes
2 Cups Spinach
Turkey Mince or Round Steak Mince (I used 350grms)
1 Tsp Cumin
1 Onion
2-3 Cloves Garlic
1 Cup Low Fat Cottage Cheese
Basil
Himalayan Pink Salt and Pepper
1 Jar of Janet’s Just Delicious Classic Tomato Sauce (Alternatively you can make your own tomato sauce using passata, tomato puree and seasoning).
Small Handful Low Fat Mozzarella

What To Do:
Preheat oven to 180C
In a pan fry onion and garlic in a little coconut oil and add minced meat of your choice.
When browned add the cumin and the tomato sauce. As I mentioned we used the Just Delicious range as they are handmade and 100% natural (found in all Supervalu’s) but you can of course make your own.
To make the creamy sauce – mix your cottage cheese and basil in a separate bowl and season with salt and pepper.
In a pyrex dish spray a little non stick spray. Slice courgettes thinly lengthways and layer across the bottom.
Add a layer of your mince meat, followed by a layer of the cottage cheese.
Top with another layer of courgettes followed by a layer of spinach. (Use all the spinach here.)
Repeat layer of mince and cottage cheese
Add a final layer of courgettes and the rest of the cottage cheese.
Cover with tinfoil and bake for 1 hour in the oven.
Remove tinfoil, sprinkle the top with low fat mozzarella and place under the grill to brown.
 Serve and enjoy!
