Healthy Potatoe Gratin: I can’t claim this one as my own! Dave made this for dinner one night and it was delicious! So I thought I’d share his little creation with all of you.
What You Need:
Thinly sliced potatoes
1 Head Cauliflower
1 Cup Grated Cheddar
1 Large Leek
2-3 Cloves Garlic
1/4 Cup Almond Milk
Fresh Chives or Coriander
Salt and Pepper
What To Do:
Pre-heat the oven to 180C
Cook cauliflower in boiling water till it softens (add garlic and season with salt and pepper at the halfway point).
Puree the cauliflower and garlic in a food processor.
Add milk and 1/2 the cup of grated cheddar. Healthy Potatoe Gratin
Spray a pyrex dish with low calorie spray and arrange 1/3 of the sliced potato along the bottom. Add some leeks, season with salt and pepper and then spread a layer of your cauliflower mix on top.
Repeat this process three times in total.
When you’ve completed the layering sprinkle with remaining cheddar cheese.
Cover with tin foil and bake in oven for 35 minutes.
Test potatoes with a knife to see that they are fully cooked.
Sprinkle with fresh chives or coriander and serve!
